Cost is primarily supply and demand. Inferior stone can be in demand until the realities catch up with the perception in the marketplace.
Stone that's been on the market for ten or twelve years - or more - tends to settle out at it's natural price point.
Marble varies quite a bit in terms of overall hardness and porosity.
You really should first find a fabricator/installer with a great reputation built up over a long track record, like ten years or more. Check references, look at competed work. When you find someone you trust, rely on that experience to help you choose the right material for you.
If you have a designer, that's fine for direction on color, but most designers, even highly experienced ones, are pretty ignorant when it comes to stone quality. So, use the designer to go after a "look", and use the stone expert in your approval process to keep the quality where you want it.
